Can a salad chain become the next big restaurant business?

Will people eat enough salads to fuel Sweetgreen’s potential growth?

This week’s Restaurant Business episode “A Deeper Dive” features Nancy Kruse, RB’s new menu trend columnist. You can read his first article, from Worlds of Flavor, here.

Kruse is well known for her expertise on menu trends and other issues affecting the restaurant industry.

That makes her perfect for a topic like this: Is there enough demand for salads to fuel the growth of a national salad chain, which Sweetgreen is trying to become. Investors are betting it will, giving the company a higher valuation than many other more established chains several times its size.

To justify this assessment, there will need to be a strong demand for salads. But Kruse doesn’t think demand is his biggest challenge. She talks about this challenge, as well as the overall demand for healthy food.
